But are you using the right type of cinnamon?
There are two main types of cinnamon: Ceylon cinnamon and cassia cinnamon.
Ceylon cinnamon, also known as "true" cinnamon, is native to Sri Lanka and has a mild, sweet flavor. Ceylon cinnamon is generally considered to be of higher quality and is more expensive than cassia cinnamon.
Cassia cinnamon, also known as Chinese cinnamon, is native to China and has a stronger, more pungent flavor. Cassia cinnamon is more commonly used in cooking and is generally less expensive than Ceylon cinnamon.
