Kale is without a doubt one of the healthiest and most nutritious plants on the planet. It is indeed absolutely packed of health-promoting substances, some of which have potent medicinal benefits.
It is a cruciferous vegetable, like cabbage, broccoli, cauliflower, collard greens, and Brussels sprouts, and belongs to the cabbage family.
Kale is also strong in antioxidants such as beta-carotene and vitamin C, as well as carotenoids such as lutein and zeaxanthin, flavonoids, and polyphenols.
Antioxidants are compounds that assist the body fight oxidative harm caused by free radicals, which is thought to be one of the primary causes of ageing and a variety of illnesses, such as cancer.
Increased intake of foods loaded in certain carotenoids, particularly dark green leafy vegetables like kale, may reduce the danger of developing age-related blindness.

Kale and Coconut water Smoothie:
This is my breakfast on atleast a few day’s of the week. When it comes to leafy greens, I suggest eating half of them raw and half cooked through the day. Smoothies are a great way to eat raw greens. Besides, the flavours of this recipe are so amazing that you will barely taste the bitterness of the Kale.
If it is your first time with smoothies or with Kale, discard the stems and only use the leaves as the stems can get quite fibrous and chewy.
Kale ki daal:
I discourage my clients from eating spinach more than once a week due to it’s high oxalic acid content and its effects on kidney health. Thus, this is a perfectly delicious recipe to Daal Palak. In simple words, just replace the spinach with Kale leaves instead.
This dish again makes a weekly appearance in my lunch thali atleast once a week if not more. It is a high- protein, highly nutritious, easy, go- to option for me to eat on busy days. Pairs well with brown rice and pickle.
Air- Fried Kale chips:
There is so much variety you can do with this dish. So you do need an air- fryer (essential kitchen equipment if you are a huge snacker!). My favourite topping is nutritional yeast and salt, giving it a cheesy flavour. This recipe is something I prefer for a movie night at home. Its healthier than popcorns, and yet has all of the crunch!
